Cooked vs Raw Sushi Rolls: What's the Difference?
"Isn't all sushi raw?" It is one of the most common questions we get, and the answer is no. Plenty of sushi is fully cooked, which makes it a great starting point if raw fish is not your thing yet. Here is the simple version.
What raw means
Raw sushi uses raw fish, prepared fresh. At Sushi City that includes the Spicy Tuna Roll, with otoro tuna and a sriracha kick, and the Philly Salmon Roll, with salmon, cream cheese, avocado and cucumber. These are the classic options a lot of people picture when they think of sushi.
What counts as cooked
Cooked rolls swap in ingredients like fried chicken katsu, soft-shell crab or vegetables. Same rice, same rolls, same satisfying bite, no raw fish involved. The Chicken Katsu Roll and the Soft-Shell Crab Roll are good places to start, and the California Roll has nothing raw in it at all.
The veggie option
If you want to skip meat and fish entirely, the Sweet Pumpkin Roll uses golden deep-fried pumpkin croquettes with rich tonkatsu sauce, and the Cucumber Maki keeps things simple and fresh.
How to choose
If you love classic flavours, go raw. If you are easing in or feeding a mixed group, go cooked, or order both in an 8 roll tube so everyone is happy.
